茶叶籽油是利用一般人们喝茶的茶叶树在秋天结的果籽为原料、经过低温压榨加工而来，产品富含茶多酚、亚油酸、亚麻酸等多种生物活性物质。
茶叶籽油具有耐高温、耐贮存、易吸收的特性。茶叶籽油制取难度大，产量很低，加之营养价值丰富。2009年12月《中华人民共和国卫生部2009年第18号公告》中，正式批准茶叶籽油为新资源食品。
茶叶籽油主要营养成分
1.茶多酚 其抗氧化能力是维生素E的18倍；
2. 不饱和脂肪酸 含量高达82%以上；
（不饱和脂肪酸是高血压、心脏病、动脉粥样硬化、高血脂患者的理想保健营养成分。）
3.亚油酸 含量约为橄榄油的3-6倍，是木本油脂中含量最高；
4.维生素E 含量约为橄榄油的5-10倍。
此外，茶叶籽油还富含植物甾醇、胡萝卜素、角鲨烯、维生素A、B等多种生物活性物质及铁、锌、镁、钙等矿物质。
